Celebrating National Quesadilla Day calls for something a little extra, and these jalapeño popper quesadillas deliver. They take everything great about a classic jalapeño popper—creamy cheese, smoky peppers, a little heat, and a crispy bite—and tuck it all into a golden tortilla cooked right on the griddle. I love using V&V Supremo Shredded Mexican 3 Cheese blend here because it melts beautifully and gives the quesadillas that rich, cheesy pull, but you can absolutely use whatever shredded cheese you love best.

Ingredients

  • 4 large flour tortillas
  • 6 to 8 fresh jalapeños, halved or sliced
  • 1 cup whipped cream cheese
  • 2 cups shredded Mexican cheese blend, such as V&V Supremo Shredded Mexican 3 Cheese blend, or your favorite shredded cheese
  • ¼ cup sweet chili sauce, plus more for drizzling
  • 2 tablespoons fresh cilantro, chopped
  • Cooking oil or butter, for the griddle
  • Optional: cooked bacon crumbles, grilled chicken, or extra jalapeños for more heat

Instructions

  1. Preheat the griddle to medium heat and lightly oil or butter the surface.
  2. Add the jalapeños to the hot griddle and cook until blistered, softened, and lightly charred. Move them to the side or transfer them to a cutting board.
  3. Spread a smooth layer of whipped cream cheese over one half of each tortilla.
  4. Sprinkle shredded Mexican cheese over the cream cheese, then add the blistered jalapeños.
  5. Drizzle with sweet chili sauce and fold each tortilla in half.
  6. Place the quesadillas on the griddle and cook for 2 to 3 minutes per side, or until the tortillas are crisp and golden and the cheese is fully melted.
  7. Remove from the griddle, let rest for a minute, then slice into wedges.
  8. Finish with fresh cilantro and an extra drizzle of sweet chili sauce before serving.

Recipe Tips

  • Control the heat: Remove the seeds and membranes from the jalapeños for a milder quesadilla, or leave some in if you like more spice.
  • Use what melts well: I love the V&V Supremo cheese blend in this recipe, but Monterey Jack, pepper jack, cheddar, Oaxaca, or any favorite melting cheese will work.
  • Do not overfill: A little filling goes a long way. Overfilled quesadillas are harder to flip and can spill on the griddle.
  • Let them rest briefly: Give the quesadillas a minute before slicing so the cheese can settle slightly.

Serving Ideas

Serve these jalapeño popper quesadillas hot off the griddle with sour cream, guacamole, salsa, or extra sweet chili sauce on the side. They make a fun game-day snack, easy lunch, or party appetizer, especially when sliced into wedges and served on a big platter.
