Ingredients

  • 2–4 boneless, skinless chicken breasts
  • Bold Mexican-style seasoning (such as Kinders Fajita blend)

  • Corn tortillas
  • Chihuahua cheese (or your favorite melty cheese)

Instructions

  1. Preheat your Blackstone griddle to medium-high heat.
  2. Cut each chicken breast in half lengthwise for thinner, even cooking. Generously season all pieces with your favorite Mexican-style spice blend.
  3. Griddle the chicken on the hot Blackstone until they reach an internal temperature of 165°F—juicy and golden, with beautiful sear marks. This usually takes about 4–6 minutes per side, depending on thickness.
  4. Remove the chicken from the griddle and cut into bite-sized pieces. Toss immediately with that smoky roasted salsa verde until everything is well coated and saucy.
  5. Lay corn tortillas directly onto the griddle. Sprinkle each tortilla with a generous handful of Chihuahua cheese.
  6. Add the saucy chicken mixture to each tortilla. Spoon a little extra salsa verde for more flavor, then fold each taco and press gently.
  7. Crisp up both sides of each taco until golden brown and the cheese is beautifully melted—about 2 minutes per side. The crunch is your reward!
