Blackstone Breakfast BRUNCH!

“Looking for Sun” Chipotle Bacon Omelet

If you have spent any time in the Pacific Northwest, you may already know the kind of comfort breakfast that shows up hot, hearty, and packed with personality. This chipotle bacon omelet is inspired by the beloved “Looking for Sun” omelet from Elmer’s, with a smoky griddle-cooked bacon, chipotle, and green onion filling tucked into fluffy eggs with melted Colby Jack cheese. It is bold, creamy, spicy, and exactly the kind of breakfast that feels like a weekend treat.

Why You’ll Love This Omelet

  • Smoky and savory: Thick-cut bacon forms the base of the filling, while chipotle chiles add deep, smoky heat.
  • Cooked for maximum flavor: The green onions and chipotle cook directly in the bacon fat, building a rich griddle-style flavor.
  • Cheesy and satisfying: Colby Jack melts into the eggs and helps hold the filling together.
  • Fresh toppings: Avocado, salsa, and sour cream balance the heat with creamy, cool, bright flavor.

Ingredients

  • 3 large eggs, beaten well
  • 4–5 strips thick-cut bacon, chopped
  • 2 chipotle chiles in adobo, deseeded and finely chopped
  • 2 tbsp green onions, finely sliced
  • 1/2 cup Colby Jack cheese, or a Cheddar/Jack blend, shredded
  • 1 fresh avocado, sliced or diced
  • Salsa, for topping
  • Sour cream, for topping
  • 4 tbsp butter

How to Make the Omelet

  1. Griddle the bacon mixture. Heat a griddle or large skillet to medium. Add the chopped bacon and cook until crisp. Stir the chopped chipotle chiles and sliced green onions directly into the bacon fat. Sauté for about 1 minute, until the onions are fragrant and translucent. Move the mixture to a cooler section of the griddle or transfer it to a plate.
  2. Cook the eggs. Melt the butter on a clean section of the griddle or in a nonstick skillet. Pour in the beaten eggs and shape them into a neat rectangle or oval as they begin to set.
  3. Add the filling. Once the eggs are mostly set but still tender, sprinkle on the Colby Jack cheese. Pile the hot chipotle-onion-bacon mixture over the cheese.
  4. Fold the omelet. Carefully fold the eggs over the filling into a neat omelet, letting the cheese melt inside.
  5. Finish and serve. Transfer the omelet to a plate. Top with fresh avocado, a spoonful of salsa, and a dollop of sour cream. Serve hot.

Tips for Success

  • Cook the chipotle and onions in the bacon fat: This is the key move that gives the omelet its smoky, savory depth.
  • Deseed the chipotles: Removing the seeds keeps the heat balanced while preserving the smoky flavor.
  • Use medium heat: Eggs cook quickly, so medium heat helps keep the omelet tender instead of rubbery.
  • Prep toppings first: Slice the avocado and have the salsa and sour cream ready so the omelet can be served immediately.

Easy Variations

  • Make it extra spicy: Add a spoonful of adobo sauce to the bacon mixture.
  • Try a different cheese: Pepper Jack, sharp cheddar, or Monterey Jack all work well.
  • Add more vegetables: Griddled bell peppers, mushrooms, or spinach can be folded in with the bacon mixture.
  • Turn it into a breakfast plate: Serve with hash browns, toast, or fresh fruit on the side.

Serving and Storage

This omelet is best served right away while the eggs are tender and the cheese is melted. If you have extra bacon-chipotle filling, refrigerate it in an airtight container for up to 3 days and reheat it on the griddle or in a skillet before making another omelet.
