  • 5/8 tsp salt
  • High-smoke-point oil, for shallow frying

General Tso’s Sauce

  • 1/2 cup plus 2 tbsp chicken broth
  • 1/2 cup plus 2 tbsp low-sodium soy sauce
  • 1/4 cup plus 1 tbsp rice vinegar
  • 3 tbsp hoisin sauce
  • 1/2 cup plus 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ginger powder
  • 4 cloves garlic, minced
  • 8–10 dried Chinese red chiles

  • 2 tbsp toasted sesame seeds
  • 3 green onions, thinly sliced
  • Steamed broccoli

How to Make Crispy General Tso’s Chicken on the Griddle

  1. Velvet the chicken. In a bowl, combine the cubed chicken with low-sodium soy sauce, Shaoxing wine, baking soda, and egg white. Toss well and let it marinate for 15 minutes.
  2. Mix the sauce. Whisk together the chicken broth, low-sodium soy sauce, rice vinegar, hoisin sauce, sugar, cornstarch, and ginger powder until smooth. Set the sauce aside.
  3. Coat the chicken. Combine the cornstarch, flour, and salt in a separate bowl or in a large zip lock bag. Add the marinated chicken and toss until every piece is heavily coated. The coating should look dry and craggy.
  4. Set up two heat zones. Preheat the griddle with a hot zone around 400°F and a cooler zone around 300°F. The hot side is for shallow-frying; the cooler side is for holding the cooked chicken.
