Brie Spring Pasta

Spring pasta
A wonderful pasta dish that is light yet incredibly satisfying.

Fresh lemon zest accompanied by cherry tomatoes, parsley, and basil are already winning ingredients in any pasta dish. Now add tossed spaghetti in baked brie cheese and you have a gourmet dish made in under 30 minutes!

 

Not to mention it looks so beautiful with all the colors from the fresh herbs, tomatoes, and lemon juice.

I like to shave on fresh lemon zest and aged Parmesan cheese for the topping.

If anything screams Spring it is this pasta!

Brie Spring Pasta

Spring spaghetti pasta with fresh herbs, aged parmesan cheese, lemon, and creamy baked brie cheese. All ready in under 30 minutes!

Ingredients

  • 1 brie cheese round
  • olive oil
  • 3/4 box spaghetti noodles, cooked al dente
  • 1 lemon, juice and zested
  • 15 cherry tomatoes, quartered
  • 1 tbsp parsley, chopped
  • 1 tbsp basil, chopped
  • 1/4 cup aged Parmesan cheese, shredded
  • 1/2 tsp sea salt plus more
  • 1/2 tsp pepper plus more

Instructions

  • To start lets set the oven temperature to 400° Cut off the top of the cheese wheel.
  • In a deep skillet or cast iron pan add the brie cheese. Sprinkle with a generous amount of olive oil. Now sprinkle the salt and pepper over top.
  • Bake for 20 minutes
  • While the cheese is baking I get the pasta water going. Don't forget to salt! Cook until aldente, set aside.
  • Chop all the herbs, and tomatoes. Juice the lemon and zest as well. Set aside.
  • Remove the cheese from the oven.
  • Working in batches with tongs, start twirling the spaghetti noodles in the cheese.
  • Keep adding the pasta until all is Incorporated. Now add the lemon juice, tomatoes, 1/4 cup reserved pasta water, and herbs.
  • Season with fresh cracked pepper and toss all together.
  • ENJOY!
