Store bought rotisserie chicken chopped and tossed into a crock pot with spices and roasted tomatoes. Super easy and delicious!
I call these my cheat tacos as hardly anything is involved as far as “cooking” goes. I was in a hurry this week while making my grocery order for pickup and I accidentally purchased a very small amount of chicken tenders instead of breast. On Tuesdays we eat tacos, I mean doesn’t everyone? I did happen to buy an already cooked herb rotisserie chicken and thought hey, I put my chicken in the slow cooker anyway, let’s give this little cheat a try.
It turned out amazing, my family absolutely loved them as tacos and even more as nachos!
After removing the skin off the chicken and taking off the meat I chop or shred, which took me a whole 5 minutes probably, I put the meat in the crock pot. To that I added, half a can of fire- roasted tomatoes (salsa style or just make sure it’s roasted) 1/2 cup of chicken broth, salt, pepper, and the main ingredient is this seasoning right here…
This amazing seasoning is a must and makes the dish. You can buy it at most grocery stores or online. A few shakes of tajin and 1 lime juiced.
Now mix this all together and let it do it’s thing. I cook for about 3-4 hours. If you do not have the time to let it cook slowly, mix it all together in a large pan and let it simmer for 20 minutes or so. Slow cooking will yield the best flavor, however. The chicken is so juicy, moist, and full of incredible flavor!
I like to serve the chicken on flour tortillas, some cheddar, salsa, and a jalapeno slaw. OR sometimes I will heat corn tortillas in a pan, add some shredded cheddar cheese and top with another tortilla. It creates a cheesy tortilla sandwich that is so delicious!
JALAPENO SLAW-
To make: mix shredded cabbage, 1 chopped jalapeno with a bit of vinegar, salt and pepper. It is a great accompaniment to shredded chicken tacos. You can add extra jalapeno, sour cream, beans, rice, or avocado endless possibilities!

Cheat Crock Pot Chicken Tacos!
Equipment
- Slow Cooker / Crock Pot
Ingredients
- 1 Cooked rotisserie chicken, skin removed, and shredded.
- 1/2 -1 can roasted salsa style tomatoes ( with peppers and onions)
- 2 packets Goya Sazon culantro y anchiote (coriandor and annatto)
- 1 tsp tajin
- 1/2 cup chicken broth
- salt / pepper to taste
- 1 lime, juiced
- Cheddar cheese, shredded
- Flour taco tortillas or white corn tortillas
Jalapeno slaw
- 1/2 14oz bag of classic coleslaw
- 1 Jalapeno, deseeded and chopped small
- 1-2 tbsp lime juice taste test and adjust flavor to liking
- 1-2 tbsp white vinegar taste test and adjust flavor to liking
- 1/2 tsp black pepper
Instructions
- In a crock pot add the chicken, tomatoes, tajin, the goya packets, salt, pepper, and lime juice. Mix, cover with the lid on medium heat and let it do it's thing. I let it cook for 3-4 hours.
- If you chopped the chicken make sure to shred it before serving. You can do this by hand or carefully using a hand mixer. It works in seconds.
- If cooking on the stove-pot, shred the chicken, add all the ingredients. and just get the mix warm. About 20 minutes.
- Mix all the jalapeno slaw ingredients together in a small bowl and set aside until ready to use.
- Serve with soft taco tortillas, or cheddar filled white corn tortillas.Cheddar cheese, jalapeno slaw, jalapenos, avocados, salsa, sour cream. You can add rice and beans if you desire. Endless possibilities!
