Cheat Crock Pot Chicken Tacos!

Moist, juicy, and DELICIOUS! With little ingredients these cheat tacos made with already cooked rotisserie chicken!

Ingredients

  • 1 Cooked rotisserie chicken, skin removed, and shredded.
  • 1/2 -1 can roasted salsa style tomatoes ( with peppers and onions)
  • 2 packets Goya Sazon culantro y anchiote (coriandor and annatto)
  • 1 tsp tajin
  • 1/2 cup chicken broth
  • salt / pepper to taste
  • 1 lime, juiced
  • Cheddar cheese, shredded
  • Flour taco tortillas or white corn tortillas

Jalapeno slaw

  • 1/2 14oz bag of classic coleslaw
  • 1 Jalapeno, deseeded and chopped small
  • 1-2 tbsp lime juice taste test and adjust flavor to liking
  • 1-2 tbsp white vinegar taste test and adjust flavor to liking
  • 1/2 tsp black pepper

Instructions

  • In a crock pot add the chicken, tomatoes, tajin, the goya packets, salt, pepper, and lime juice. Mix, cover with the lid on medium heat and let it do it's thing.
    I let it cook for 3-4 hours.
  • If you chopped the chicken make sure to shred it before serving. You can do this by hand or carefully using a hand mixer. It works in seconds.
  • If cooking on the stove-pot, shred the chicken, add all the ingredients. and just get the mix warm. About 20 minutes.
  • Mix all the jalapeno slaw ingredients together in a small bowl and set aside until ready to use.
  • Serve with soft taco tortillas, or cheddar filled white corn tortillas.
    Cheddar cheese, jalapeno slaw, jalapenos, avocados, salsa, sour cream. You can add rice and beans if you desire. Endless possibilities!
