1Cooked rotisserie chicken, skin removed, and shredded.
1/2 -1 canroasted salsa style tomatoes ( with peppers and onions)
2 packetsGoya Sazon culantro y anchiote (coriandor and annatto)
1tsptajin
1/2cupchicken broth
salt / pepper to taste
1lime, juiced
Cheddar cheese, shredded
Flour taco tortillas or white corn tortillas
Jalapeno slaw
1/214ozbag of classic coleslaw
1Jalapeno, deseeded and chopped small
1-2tbsplime juicetaste test and adjust flavor to liking
1-2tbspwhite vinegar taste test and adjust flavor to liking
1/2tspblack pepper
Instructions
In a crock pot add the chicken, tomatoes, tajin, the goya packets, salt, pepper, and lime juice. Mix, cover with the lid on medium heat and let it do it's thing. I let it cook for 3-4 hours.
If you chopped the chicken make sure to shred it before serving. You can do this by hand or carefully using a hand mixer. It works in seconds.
If cooking on the stove-pot, shred the chicken, add all the ingredients. and just get the mix warm. About 20 minutes.
Mix all the jalapeno slaw ingredients together in a small bowl and set aside until ready to use.
Serve with soft taco tortillas, or cheddar filled white corn tortillas.Cheddar cheese, jalapeno slaw, jalapenos, avocados, salsa, sour cream. You can add rice and beans if you desire. Endless possibilities!
