This is one of my households favorite “diet” dishes. I say diet because it does not feel like diet food! This meal will leave you feeling so satisfied and actually excited to eat it again. The chicken is covered in a blend of spices and pan seared. Then gets served on top of lime jasmine rice and finally topped with a super refreshing avocado salsa with red onion, lime, and salt/pepper! It is absolutely delicious!

Well let dive right in, oh and did I mention it is all done in under 30 minutes? Yesss!
Tex-Mex Chicken with Avocado Salsa and Lime Rice
This is the ultimate 30 minute meal that will leave everyone with a smile on their face! Low calorie chicken breasts with high protein avocado salsa and lime rice!
Servings: 4 servings
Ingredients
- 4 chicken breasts, skinless, boneless, and pounded thin or cut in half lengthwise
- 3 cups cooked jasmine rice
- 2 avocados
- 1/2 red onion, chopped small
- 3 limes
- 1 1/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 2 tbsp. avocado or olive oil
Instructions
- In a small bowl combine all of the spices. Sprinkle on evenly and rub onto the chicken breasts.
- In a large cast iron or skillet add the olive oil, and heat on medium heat, to the pan the chicken goes.
- Cook for 8-10 minutes on each side or until thermometer reaches 165° The breasts will be golden, maybe even a bit burnt looking because of the spices, but that's what we want!
- While the breasts are cooking mix together the avocado, onion, and the juice of 1 1/2 limes. Season with salt and pepper.
- In a bowl toss the rice, the juice of 1 lime, and sprinkle with pepper.
- To serve, spread the rice on a platter or individual plate. Add the chicken to the top, and to finish spoon on the salsa.
