This is the ultimate 30 minute meal that will leave everyone with a smile on their face! Low calorie chicken breasts with high protein avocado salsa and lime rice!
4chicken breasts, skinless, boneless, and pounded thin or cut in half lengthwise
3cupscooked jasmine rice
2avocados
1/2red onion, chopped small
3limes
1 1/4tspsalt
1/2tspblack pepper
1/4tsppaprika
1/4tspcayenne pepper
1/4tspgarlic powder
2tbsp.avocado or olive oil
Instructions
In a small bowl combine all of the spices. Sprinkle on evenly and rub onto the chicken breasts.
In a large cast iron or skillet add the olive oil, and heat on medium heat, to the pan the chicken goes.
Cook for 8-10 minutes on each side or until thermometer reaches 165° The breasts will be golden, maybe even a bit burnt looking because of the spices, but that's what we want!
While the breasts are cooking mix together the avocado, onion, and the juice of 1 1/2 limes. Season with salt and pepper.
In a bowl toss the rice, the juice of 1 lime, and sprinkle with pepper.
To serve, spread the rice on a platter or individual plate. Add the chicken to the top, and to finish spoon on the salsa.
