Pumpkin Waffles with Cinnamon Syrup

The perfect fall brunch does exist and I have the recipe for you!

My fail proof fluffy waffle is so good with touches of pumpkin puree, and pumpkin pie spice. Some butter, cinnamon syrup and chopped peans or almonds.

We start by making a Cinnamon syrup that is so divine you will be licking the spoon! It’s very easy to make and accompanies the waffles perfectly.

Cinnamon Syrup-

Mix brown sugar and water in a small sauce pan, whisk until the sugar is dissolved, add butter, vanilla extract, and cinnamon. Bring to a simmer while whisking and then set aside while we get the waffles ready. You can store the syrup in a sealed mason jar in the refrigerator for several weeks.

Just look how fantastic that is! This recipe is great for guests and especially on Thanksgiving weekend for brunch. You can make large batches by doubling or tripling the recipe.

Pumpkin Waffles with Cinnamon Syrup!

Ingredients

Waffles

  • 2 cups all-purpose flour (cassava flour for gf)
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp pumpkin spice
  • 1 cup milk I use 1%
  • 3/4 cup pumpkin puree
  • 5 tbsp heavy cream
  • 2 eggs
  • 1/2 cup melted butter

Cinnamon Syrup

  • 1 cup packed brown sugar
  • 2/3 cup hot water
  • 1/4 cup butter, cut into pieces
  • 1 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract

Toppings

  • 1/2 cup pecans, chopped
  • butter, sliced
  • whipped cream optional

Instructions

  • Cinnamon syrup
  • In a small sauce pan on medium high heat, combine the sugar and water. Bring to a boil while whisking.
  • Stirring frequently, turn the heat to medium and let it simmer for about 2 minutes. Begin adding the butter a little at a time, stirring until all the butter has melted.
  • Now add the cinnamon and vanilla extract. Whisk well and let it thicken, about 2 minutes. Turn off the heat, put on a lid to keep warm.
    When ready to seve tansfer to a small mason jar, ramekin, or syrup jar.
    Now lets start the waffle batter.

Waffles

  • Plug in the waffle maker and let it warm up
  • In a large mixing bowl add the flour, baking powder, sugar, pumpkin spice and salt. Stir well.
  • Now in a separate bowl whisk the eggs. Add the milk, cream, and pumpkin puree. Combine the wet into the large dry bowl and mix until combined.
  • Plug in the waffle maker and when at the right temperature, oil it. You can spray with oil spray or butter the maker with brush.
  • Pour or ladle the batter onto the waffle maker. However much you need for the size or the waffle machine.
  • Cook or 5-6 minutes or until golden brown.
  • Move cooked waffle to a serving plate and cover with foil while you cook the rest of the waffles.
  • After all the waffles are ready. Plate. Add one pad of butter in the middle, Pour on the syrup, and top with the pecans!

  • Serve with cider, mimosas, or sparking cider and fresh strawberries for the ultimate brunch expirence!
