Potato Chip Omelet

A simple to make French breakfast omelet that is a fun twist on the traditional  American version. Its also rather fancy looking if you ask me.

In France you will find this beauty on the menu at some chic restaurants. It is usually served with a salad and easy vinaigrette. I like to make it for brunch with some fresh fruit, toasted French bread, and bacon. It is quite a treat! The best part being that it is very easy to make. The crunch of the potato chip is very texturally pleasing too.

Accompanying the chips is fresh chopped chives, garlic flakes, paprika, fresh cracked pepper, and I like to top with fresh grated Parmigiano Reggiano.

Ingredients

  • 1 cup semi crunched potato chips I like Kettle or lays
  • 2 tsp butter
  • 4 eggs
  • 2 tbsp. fresh chives, minced
  • 1 tsp garlic flakes
  • 1/4 tsp paprika
  • fresh cracked pepper
  • fresh grated Parmigiano Reggiano cheese optional
  • Hot sauce optional

Instructions

  • Whisk the eggs in a medium bowl
  • In a separate small bowl add the chips, garlic flakes, chives, and paprika.
  • Mix
  • Pour in half of the chip mix into the egg bowl.
  • Heat a non stick pan over medium heat.
  • Add the butter and let it melt, then pour the egg mixture in.
  • Let it cook for 2 minutes.
  • Now sprinkle on the remaining chip dip. Cook for 2 more minutes.
  • Slide onto onto a plate or cutting board.
  • Sprinkle on the pepper and cheese. Fold in half and cut into 2 portions.
  • Enjoy as is or dap on some hot sauce.
  • Sides that you can serve with are toasted French bread, fresh fruit and bacon or sausage.
