Potato Chip Omelet

A fancy French omelet that makes a fun addition to brunch. So easy to make and delicious.

Ingredients

  • 1 cup semi crunched potato chips I like Kettle or lays
  • 2 tsp butter
  • 4 eggs
  • 2 tbsp. fresh chives, minced
  • 1 tsp garlic flakes
  • 1/4 tsp paprika
  • fresh cracked pepper
  • fresh grated Parmigiano Reggiano cheese optional
  • Hot sauce optional

Instructions

  • Whisk the eggs in a medium bowl
  • In a separate small bowl add the chips, garlic flakes, chives, and paprika.
  • Mix
  • Pour in half of the chip mix into the egg bowl.
  • Heat a non stick pan over medium heat.
  • Add the butter and let it melt, then pour the egg mixture in.
  • Let it cook for 2 minutes.
  • Now sprinkle on the remaining chip dip. Cook for 2 more minutes.
  • Slide onto onto a plate or cutting board.
  • Sprinkle on the pepper and cheese. Fold in half and cut into 2 portions.
  • Enjoy as is or dap on some hot sauce.
  • Sides that you can serve with are toasted French bread, fresh fruit and bacon or sausage.
