Ingredients

cup
semi crunched potato chips
I like Kettle or lays

tsp
butter
4
eggs

tbsp.
fresh chives, minced
1
tsp
garlic flakes
1/4
tsp
paprika
fresh cracked pepper
fresh grated Parmigiano Reggiano cheese
optional
Hot sauce
optional
Instructions
Whisk the eggs in a medium bowl
In a separate small bowl add the chips, garlic flakes, chives, and paprika.
Mix
Pour in half of the chip mix into the egg bowl.
Heat a non stick pan over medium heat.
Add the butter and let it melt, then pour the egg mixture in.
Let it cook for 2 minutes.
Now sprinkle on the remaining chip dip. Cook for 2 more minutes.
Slide onto onto a plate or cutting board.
Sprinkle on the pepper and cheese. Fold in half and cut into 2 portions.
Enjoy as is or dap on some hot sauce.
Sides that you can serve with are toasted French bread, fresh fruit and bacon or sausage.
