Here I have for you a super easy dinner recipe that I like to whip up on busy nights. You can omit the chicken and add veggies if you would like or add the veggies with the chicken. Either way it is a protein packed meal that has a creamy sauce.
Doesn’t that look yummy? I like to serve over soba noodles, angel hair noodles, or jasmine rice. The sauce is the star and really simple to make. Sometimes I like to make it super spicy and will add hot sauce into the mix. My 2 favorite winners are Siracha or Truff sauce, yum! To finish a handful of chopped peanuts for texture and green onions make a great topping.

Peanut Sauce Chicken Stir-Fry
A easy weeknight dinner that with super creamy peanut sauce packed with protein!
Servings: 4 servings
Ingredients
- 2 chicken breast, cut into bite size pieces
- 1 cup creamy peanut butter
- 1/2 cup ketchup
- 1/2 cup warm water
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp fish sauce
- 1/2 tbsp rice wine vinegar
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
- 1/4 cup peanuts chopped
- 1 tbsp siracha or favorite hot sauce optional for spicy lovers
- 2 green onions, thinly sliced
- soba or angel hair noodles, prepared.
- 2 tbsp peanut oil
Instructions
- Heat a wok or large pan with peanut oil, on med - high heat. Add the chicken and season with salt and pepper. Cook until not longer pink and sprinkle with red pepper flakes.
- In medium bowl combine the peanut butter, ketchup, water, soy, fish sauce, garlic powder, rice wine vinegar, sesame oil, and siracha (optional) Whisk well.
- In the wok, move the chicken to the sides of the pan, add a bit more oil and toss in the noodles. Stir fry for a few minutes and pour on the creamy sauce. Stir fry until well combined. If the sauce is too thick add a bit more warm water to loosen it up.
- Serve with chopped peanuts, green onions, and extra siracha! Enjoy.
