Peanut Sauce Chicken Stir-Fry

Here I have for you a super easy dinner recipe that I like to whip up on busy nights. You can omit the chicken and add veggies if you would like or add the veggies with the chicken. Either way it is a protein packed meal that has a creamy sauce.

Doesn’t that look yummy? I like to serve over soba noodles, angel hair noodles, or jasmine rice. The sauce is the star and really simple to make. Sometimes I like to make it super spicy and will add hot sauce into the mix. My 2 favorite winners are Siracha or Truff sauce, yum! To finish a handful of chopped peanuts for texture and green onions make a great topping.

Peanut Sauce Chicken Stir-Fry

Ingredients

  • 2 chicken breast, cut into bite size pieces
  • 1 cup creamy peanut butter
  • 1/2 cup ketchup
  • 1/2 cup warm water
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp fish sauce
  • 1/2 tbsp rice wine vinegar
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1/4 cup peanuts chopped
  • 1 tbsp siracha or favorite hot sauce optional for spicy lovers
  • 2 green onions, thinly sliced
  • soba or angel hair noodles, prepared.
  • 2 tbsp peanut oil

Instructions

  • Heat a wok or large pan with peanut oil, on med - high heat. Add the chicken and season with salt and pepper. Cook until not longer pink and sprinkle with red pepper flakes.
  • In medium bowl combine the peanut butter, ketchup, water, soy, fish sauce, garlic powder, rice wine vinegar, sesame oil, and siracha (optional) Whisk well.
  • In the wok, move the chicken to the sides of the pan, add a bit more oil and toss in the noodles. Stir fry for a few minutes and pour on the creamy sauce. Stir fry until well combined. If the sauce is too thick add a bit more warm water to loosen it up.
  • Serve with chopped peanuts, green onions, and extra siracha! Enjoy.
