Mexican Pizzas

Taco Bell style Mexican Pizzas but 10 times better!

If you are a fan of the Mexican pizza on the TB menu than you were probably pretty excited when they brought it back this year. Well so was my husband! Except every time he wanted one they were sold out. So after enough moping about I decided to make his day and make them myself. They are pretty easy and SUPER delicious!

If you have time or want to make from scratch here is my flour tortilla recipe Homemade Flour Tortillas!

You can buy soft flour tortillas and fry them or buy premade tostadas which is the fastest method.

Ok let’s get started!

Servings-4
Ingredients:
8 flour soft taco tortillas or Tostada shells all ready to go (most grocery stores carry them)
Vegetable oil for frying
1 lb. ground beef or ground turkey
Taco seasoning (pre made packet or favorite spices
1 19 oz. can red enchilada sauce
1 can refried beans, cooked
1 bag of shredded Mexican cheese
2-3 fresh chopped Roma tomatoes
2 green onions, sliced
1/4 cup black olives chopped Fresh cilantro, minced. (optional)
Hot sauce
Directions:
•Heat the oil in a large pot/pan about 1/3 inch deep. Med-high heat. (Skip if using ready to go Tostadas)
• When the oil is ready drop one tortilla at a time in and fry until golden and crisp on both sides. It’s OK if it’s puffs up. Set aside to drain on paper towels and finish the remaining tortillas.
• Heat the oven to 450°
•Cook the ground beef until no longer pink, drain, add taco seasoning (if using a packet follow instructions on back) add water and cook until almost all the liquid is gone.
•Line a baking sheet with parchment paper.
•Lay one fried tortilla down  on the baking sheet and spread a even amount of beans.  Now top with ground beef, spread. Pour on 2 tbsp. of enchilada sauce.
•Top with another fried tortilla. Now cover with lots of cheese and the chopped tomatoes.
•Repeat with remaining tortillas.
•Right before putting in the oven carefully Pour on 1/4 cup more of the enchilada sauce on all the top tortillas.
•Bake for 10-20 minutes or until the cheese is melty.
•Top with olives, onions, and fresh parsley. I love a few good dashes of hot sauce too.
