I freaking LOVE waffles. In the debate of waffle vs pancake, waffle all the way! There are so many variations of deliciousness you can make with these fluffy and crunchy little pieces of heaven. I have tried a few batter variations and this is by far my best one. It manages to produce a perfect crunchy crusty and the most fantastic fluffy inside!

You cannot beat a good quality brand of maple syrup and some days that’s all I crave, but most of the time my brain won’t simply let me not get creative and experiment with different toppings/sauces. For this waffle the sweet is a absolute must as it balances out the savory, the salty bacon, and spicy jalapeno. I really wanted just a bit of a bite back so I mixed together 1/2 cup of maple syrup and 1 tablespoon of sriracha. Every ingredient compliments the other so perfectly. It really is the perfect marriage of sweet and spicy. I hope you enjoy!

Bacon Jalapeno Waffles with Sweet & Spicy Syrup
Equipment
- Waffle maker
Ingredients
- 2 cups All-purpose flour (cassava flour for gf)
- 1 tbsp. sugar
- 1 tbsp. baking powder
- 1/2 tsp salt
- 1 1/2 cups milk I use 1%
- 5 tbsp. heavy cream
- 2 eggs
- 1/2 cup butter, melted
- 1 cup cheddar cheese, shredded
- 1 jalapeno, seeded, and chopped extra jalapenos for topping if desired
- 1/2 cup maple syrup
- 1 tbsp. siracha hot sauce
- 1/2 pound bacon, cooked, and chopped for topping
Instructions
- Preheat a waffle iron. I use the average sized maker, however depending on what style/size you have cook times may vary.
- In a large mixing bowl, combine the first four ingredients and stir. Now add the wet, milk, cream, butter and eggs. Stir until well combined.
- Mix in the cheddar cheese, and the chopped jalapeno.
- Scoop 1/2 cup of the batter and pour onto the waffle maker, put the lid down and let cook about 4-5 minutes. Keep an eye onto see if it is browning.
- While the first waffle is cooking mix together the maple syrup and sriracha.
- Continue to cook each waffle and plate. Top with chopped bacon, jalapeno and divide syrup for each plate. Eat alone or serve with a fried egg!
