Bacon Jalapeno Waffles with Sweet & Spicy Syrup

Ingredients

  • 2 cups All-purpose flour (cassava flour for gf)
  • 1 tbsp. sugar
  • 1 tbsp. baking powder
  • 1/2 tsp salt
  • 1 1/2 cups milk I use 1%
  • 5 tbsp. heavy cream
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 cup cheddar cheese, shredded
  • 1 jalapeno, seeded, and chopped extra jalapenos for topping if desired
  • 1/2 cup maple syrup
  • 1 tbsp. siracha hot sauce
  • 1/2 pound bacon, cooked, and chopped for topping

Instructions

  • Preheat a waffle iron. I use the average sized maker, however depending on what style/size you have cook times may vary.
  • In a large mixing bowl, combine the first four ingredients and stir. Now add the wet, milk, cream, butter and eggs. Stir until well combined.
  • Mix in the cheddar cheese, and the chopped jalapeno.
  • Scoop 1/2 cup of the batter and pour onto the waffle maker, put the lid down and let cook about 4-5 minutes. Keep an eye onto see if it is browning.
  • While the first waffle is cooking mix together the maple syrup and sriracha.
  • Continue to cook each waffle and plate.
    Top with chopped bacon, jalapeno and divide syrup for each plate. Eat alone or serve with a fried egg!
