Homemade Stir-fry Noodles!

These stir-fry or ramen noodles are really pretty simple of a recipe. Unlike Italian style pasta, this recipe has baking soda in it. The baking soda helps give that chewy texture a ramen/stir-fry noodle has. The best part is that you can make a big batch and freeze them for easy week night dinners! Chop up some fresh vegetables, add some sauce, and add frozen noodles. Delicous and simple.

I like to use a my kitchen aid pasta attachment to make the noodles. There are many different pasta machines out there, just make sure it has a spaghetti sized noodle attachment.

After you make the noodles, put them in stacks with a good sprinkle of flour to keep them from sticking together. I separate in batches and then freeze them in zip lock bags or cook asap. It is that easy!

Homemade Stir-fry Noodles!

Equipment

  • Pasta machine with skinny noodle or spaghetti attachments I use the kitchen aid pasta attachments

Ingredients

  • 3 cups All purpose flour
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 2 eggs
  • 1/2 cup warm water

Instructions

By Hand

  • If you do not have a mixer, you can knead by hand. It will take some muscle. Think of it as a good work out.
    Combine all the ingredients in a bowl and mix. Turn out onto a counter and knead for 8-10 minutes until smooth,
    Head to the 3rd instruction for the next direction.

Kitchen aid or Mixer

  • In a mixer, fitted with the pasta attachment, add all of the ingredients.
    Mix on low speed until all the ingredients are combined. Then up the speed to medium for 5 minutes or until smooth. You may need to add a little bit more water.
    After smooth turn out onto a counter.
  • Shape the dough into a rectangle and wrap in plastic wrap.
  • Refrigerate for 1 hour.
  • After 1 hour prepare the pasta machine.
  • Cut the dough into 4 pieces. Push through the spaghetti pasta attachment on a kitchen aid mixer or use a hand turn pasta machine.
  • Make the noodles as long as you want. I make them a little longer than spaghetti noodles.
  • Place into piles of 4 with a few sprinkles of flour.
  • I usually make 4-6 freezer bags Just depends on what serving size you want.
  • To cook, add in boiling water for 2-3 minutes. Remove and add to stir-fry's or ramen.
