Greek Feta Chicken

Greek style- sheet pan chicken with feta, herbs, lemon, and a bell pepper/parsley garnish.

Not only is this recipe packed with so much flavor, but it is also done in under an hour and will get the family excited next time it’s on the menu! We use fresh lemon, feta, and herbs de Provence. This Grecian style chicken has flavors that create a pop of wow in your mouth.

It’s so light and the perfect spring/summer meal! I love to make this with a simple baby red potato roasted in the oven with olive oil, herbs de Provence and salt/pepper. Store bought garlic-herb cous cous goes well and is a quick side or make my orzo salad below.

Greek Feta Chicken

Ingredients

  • 2 large Chicken breasts, cut in half lengthwise (will create 4 breasts) Or 4 full breasts
  • olive oil
  • 2 ounces Feta cheese. Most packs are 4 ounces, just use half
  • 1 lemon, quartered
  • 1/2 tbsp herbs de Proevence
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp bell pepper, finely diced can use orange or red. I like orange because it is sweeter.
  • 1 1/2 tbsp parsley, finely chopped
  • cucumber slices optional

Instructions

  • Preheat the oven to 350°
  • Cut the breasts lengthwise and try to make them as even as possible. Or 4 full breasts not cut in half for more protein.
  • On a sheet pan add the breasts, drizzle 1/2 the lemon over all the breasts. Add salt, pepper, and herbs de Provence.
  • Sprinkle on the feta and a good drizzle of olive oil.
    Bake it in the oven for 30-40 minutes or until the thermometer reads 165℉
  • While the chicken is cooking, prep the garnish.
    In a small bowl, combine the remaining lemon juice, bell pepper, and parsley. Mix and set aside.
  • When the chicken in done cooking. Top each breast with a spoonful of the bell pepper garnish.
