Greek Feta Chicken

Greek style sheet pan chicken with feta, herbs lemon, bell pepper and parsley garnish. So healhty and delicious!

Ingredients

  • 2 large Chicken breasts, cut in half lengthwise (will create 4 breasts) Or 4 full breasts
  • olive oil
  • 2 ounces Feta cheese. Most packs are 4 ounces, just use half
  • 1 lemon, quartered
  • 1/2 tbsp herbs de Proevence
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp bell pepper, finely diced can use orange or red. I like orange because it is sweeter.
  • 1 1/2 tbsp parsley, finely chopped
  • cucumber slices optional

Instructions

  • Preheat the oven to 350°
  • Cut the breasts lengthwise and try to make them as even as possible. Or 4 full breasts not cut in half for more protein.
  • On a sheet pan add the breasts, drizzle 1/2 the lemon over all the breasts. Add salt, pepper, and herbs de Provence.
  • Sprinkle on the feta and a good drizzle of olive oil.
    Bake it in the oven for 30-40 minutes or until the thermometer reads 165℉
  • While the chicken is cooking, prep the garnish.
    In a small bowl, combine the remaining lemon juice, bell pepper, and parsley. Mix and set aside.
  • When the chicken in done cooking. Top each breast with a spoonful of the bell pepper garnish.
