Bite size chicken with a serrano pepper, red and yellow bell peppers and covered in a sweet gingery sauce!
This recipe is quick and super tasty. It is one of my favorite weeknight meals that my family always looks forward to eating. I like to use chicken breast, but you can do thighs as well. The chicken is seasoned with salt, pepper, and a quick toss of corn starch. This will give a little coating to help crunch it up and grab the sauce.
The sauce is DELICIOUS. It is made of soy, ginger paste, oyster sauce, honey, sweet chili sauce, apple cider vinegar, and sesame oil. Whisk and pour on the sauteed chicken and vegetables. YUM!
I like to garnish with green onions and sesame seeds, serve with jasmine rice.

Chicken-Pepper Stir Fry
Chicken and pepper stir fry with a sweet sauce that makes this an easy and delicious weeknight dinner.

- Wok or large skillet
Ingredients
- 2 large chicken breasts cut into bite size pieces
- 2 tbsp. vegetable or avocaco oil
- 1/2 cup corn starch
- 1 red bell pepper, chopped small
- 1 yellow bell pepper, chopped small
- 1 large serrano pepper, sliced thin
- salt and pepper
- 1/4 cup soy sauce
- 2 tsp ginger paste
- 2 tbsp oyster sauce
- 1/4 cup honey
- 1/4 cup sweet chili sauce
- 1 tbsp. apple cider vinegar
- 1 tbsp sesame oil
- 2 green onions, sliced thin
- 1 tbsp. sesame seeds
Instructions
- Chop the chicken into bite size pieces and season with salt and pepper. Toss the chicken in 1/2 cup of corn statch and get it all coated.
- Heat a wok over med-high heat and add the oil. Add the chicken and stir. Cook for 4-5 minutes or until no longer pink and then add in the bell peppers and serrano pepper.
- Stir fry for 5-6 minutes. Make sure to keep stirring around so it doesn't stick to the bottom.
- In a small bowl combine the soy, ginger, honey, sweet chili sauce, apple cider vinegar, seseame oil, and oyster sauce. Whisk until smooth.
- Pour on the sauce after the vegetables are cooked to your liking. Saute until coated and thickened.
- Sprinkle on the green onions and stir fry for 1 minute. Now goes the sesame seeds.
- Serve over jasmine rice.
