Super easy puff pastry filled with all the yummy breakfast favorite!
This is a great one for guests, brunch, or anytime really. The ingredients are so versatile, you can add just about anything! I keep puff pastry on hand because its one of those great products you can really take anywhere with food, savory or sweet. For our breakfast pizza it takes about 10-15 min to thaw , 5 min. to assemble, and 20 to cook. So its fast too. I mean just look how pretty it is.

This flavor combo is a favorite in my home. The ham, bell pepper, spinach, and green onion work really well together.

Breakfast Pizza!
Equipment
- baking sheet
Ingredients
- 1 puff pastry sheet, thawed
- 1/4 cup flour
- 2 tbsp. olive oil
- 4 slices cooked ham (i like honey ham lunch meat)
- 1/4 bell pepper, diced any color.
- 1/2 cup chopped spinach
- handful of shredded cheese. I used Mexican blend
- 4 eggs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 green onion, sliced
- favorite hot sauce (optional)
Instructions
- Pre-heat the oven to 400°
- Take 1 sheet of puff pastry out of the wrapper and set out on the counter to thaw.Line a baking sheet with parchment paper
- Prep the veggies while the sheet is thawing.
- When the pastry is thawed, but still a bit cold/stiff, carefully flour a workspace. Open the pastry and remove the paper. Roll out with a rolling pin to a rectangle. It's okay if it tears, just pinch back together. We just want it rolled out a little bit, Don't go too thin.

- Carefully move to the baking sheet.
- Now brush with 1 1/2 tbsp. olive oil.
- Now add the ham, keep an edge.

- Next goes the bell pepper and spinach.

- Cheese

- Now crack the eggs. Season with salt and pepper. Fold the corners in and then the remaining edges.

- Brush the folded pastry with the remaining oil.
- Bake for 20 minutes or until the edges/pastry is golden brown.

- Cut into 4 pieces (i use a pizza cutter) drizzle on some hot sauce if you like, or fresh avocado...ENJOY!
