Bean Salad with Parmesan Cheese Vinaigrette!

This salad will satisfy your taste buds, curve your appetite, and its GOOD FOR YOU!

I love any chance I get to throw beans into a meal. According to Medical News Today, “Beans are an excellent source of fiber, protein, and iron. Studies have shown that many of the nutrients in beans have potential health benefits, which range from decreasing cholesterol to maintaining low blood sugar.” Not to mention full of antioxidants and helps control a healthy weight!

I have really been trying to incorporate beans/salads into my life a whole lot more. I will turn 40 this year (December) and having chronic illness it’s important to me to try and maintain my remission and live a healthier life. NOW don’t panic, I will still be making and creating all the carb and naughty dishes, just maybe won’t be indulging as much.

Let’s talk about this salad!

Here we have so many yummy flavors and vitamins. Kidney and garbanzo beans with couscous. Bell pepper, red onion, radish, and cucumber tossed together with a DELICIOUS parmesan/balsamic dressing. The dressing has green onions, balsamic, red wine vinegar, parmesan cheese, olive oil, salt, and pepper. All topped of with some fresh chopped parsley. YUMMM! The dressing can be stored for a couple days in the refrigerator.

Bean Salad with Parmesan Vinaigrette!

Ingredients

SALAD

  • 1 cup couscous cooked
  • 1 cucumber, sliced
  • 1 yellow bell pepper, sliced or chopped
  • 1 radish, sliced thin
  • 1/4 red onion, sliced, thin
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained, and rinsed
  • 2 tbsp. fresh parsley, minced

SALAD DRESSNG

  • 1/2 cup finely grated parmesan cheese
  • 2 green onions, sliced thin
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. red wine vinegar
  • 1/4 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

Salad Dressing

  • In a mason jar or bowl combine dressing ingredients. Shake or whisk well and set aside.

SALAD

  • Toss together in a large bowl or deep platter, ALL of the salad ingredients.
  • Now pour on the dressing, toss well and top with the parsley.
  • ENJOY!!!
