Bean Salad with Parmesan Vinaigrette!

Here we have so many yummy flavors and vitamins. Kidney and garbanzo beans with couscous. Bell pepper, red onion, radish, and cucumber tossed together with a DELICIOUS parmesan/balsamic dressing. The dressing has green onions, balsamic, red wine vinegar. parmesan cheese, olive oil, salt, and pepper. All topped of with some fresh chopped parsley. YUMMM!

Ingredients

SALAD

  • 1 cup couscous cooked
  • 1 cucumber, sliced
  • 1 yellow bell pepper, sliced or chopped
  • 1 radish, sliced thin
  • 1/4 red onion, sliced, thin
  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained, and rinsed
  • 2 tbsp. fresh parsley, minced

SALAD DRESSNG

  • 1/2 cup finely grated parmesan cheese
  • 2 green onions, sliced thin
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. red wine vinegar
  • 1/4 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

Salad Dressing

  • In a mason jar or bowl combine dressing ingredients. Shake or whisk well and set aside.

SALAD

  • Toss together in a large bowl or deep platter, ALL of the salad ingredients.
  • Now pour on the dressing, toss well and top with the parsley.
