This pasta dish has it all… Salty, sweet, spicy, and a kiss of citrus!
Bacon and artichokes tossed with pasta… It IS the spring meal you have been looking for! It is SUPER easy and quick to whip up without compromising on flavor. I love pasta but sometimes it leaves that heavy gut feeling when weighed down by heavy sauces. This most definitely is not the case and is one the whole family will love.

Artichoke -Lemon and Bacon Pasta
The perfect spring pasta!
Servings: 4 servings
Ingredients
- 1/2 box spaghetti noodles Or fresh, see my basic pasta post for recipe
- 1 can Artichoke hearts, drained and chopped
- 2 cloves garlic, minced
- 1/2 pound bacon, cooked and crumbled
- 1/2 lemon, juiced
- 1 tbsp lemon zest
- 1/4 tsp red chili flakes
- 1/2 cup reserved water from the noodles
- 1/2 cup grated parmesan cheese
- salt and pepper taste
- 1 tbsp parsley, chopped
- 1 tbsp olive oil, plus more fro drizzling
Instructions
- Fill a large sauce pan or stock pot with water and add 1 tablespoon of salt. Turn on med-high heat and bring to a boil. Cook the noodles. Reserve 1/2 cup of the water and then drain.
- In a large pan saute the garlic and artichokes in 1 tablespoon of olive oil. Cook for 6-8 minutes.
- Add the noodles, lemon juice, red pepper flakes, and reserved water. Toss together. Now season with salt and pepper.
- Cook until most of the liquid is gone. Add the bacon and parmesan cheese. Toss together and then remove from the heat.
- Top with a nice drizzle of olive oil, parsley and lemon zest.
- Serve right away.
