Artichoke -Lemon and Bacon Pasta

Ingredients

  • 1/2 box spaghetti noodles Or fresh, see my basic pasta post for recipe
  • 1 can Artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/2 pound bacon, cooked and crumbled
  • 1/2 lemon, juiced
  • 1 tbsp lemon zest
  • 1/4 tsp red chili flakes
  • 1/2 cup reserved water from the noodles
  • 1/2 cup grated parmesan cheese
  • salt and pepper taste
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil, plus more fro drizzling

Instructions

  • Fill a large sauce pan or stock pot with water and add 1 tablespoon of salt. Turn on med-high heat and bring to a boil. Cook the noodles. Reserve 1/2 cup of the water and then drain.
  • In a large pan saute the garlic and artichokes in 1 tablespoon of olive oil. Cook for 6-8 minutes.
  • Add the noodles, lemon juice, red pepper flakes, and reserved water. Toss together. Now season with salt and pepper.
  • Cook until most of the liquid is gone. Add the bacon and parmesan cheese. Toss together and then remove from the heat.
  • Top with a nice drizzle of olive oil, parsley and lemon zest.
  • Serve right away.
