1/2boxspaghetti noodles Or fresh, see my basic pasta post for recipe
1canArtichoke hearts, drained and chopped
2clovesgarlic, minced
1/2 poundbacon, cooked and crumbled
1/2 lemon, juiced
1 tbsp lemon zest
1/4 tspred chili flakes
1/2 cupreserved water from the noodles
1/2 cupgrated parmesan cheese
salt and pepper taste
1tbsp parsley, chopped
1tbspolive oil, plus more fro drizzling
Instructions
Fill a large sauce pan or stock pot with water and add 1 tablespoon of salt. Turn on med-high heat and bring to a boil. Cook the noodles. Reserve 1/2 cup of the water and then drain.
In a large pan saute the garlic and artichokes in 1 tablespoon of olive oil. Cook for 6-8 minutes.
Add the noodles, lemon juice, red pepper flakes, and reserved water. Toss together. Now season with salt and pepper.
Cook until most of the liquid is gone. Add the bacon and parmesan cheese. Toss together and then remove from the heat.
Top with a nice drizzle of olive oil, parsley and lemon zest.
