20 Minute Herb Pasta

Easy pasta
This will be the easiest pasta you make. Packed with incredible flavor that only takes moments to put together!  

 Some nights require the bare minimum of effort, and this is one of those meals that tastes like you spent hours preparing it. Thankfully, that is not the case. We will be making a chunky puree that consists of basil, parsley, arugula, garlic olive oil, mint, and tomatillo tomatoes!

Fresh herbs

I know it sounds a bit odd, but you must trust me and give this herb dish a try. Tossed with al dente spaghetti and finished off with grated parmesan cheese, it is such a tantalizing dance for the tastebuds! The raw tomatillos give such a fun and tangy bite paired with the mint and other herbs. We love to eat this dish regularly in my home and the BEST part is if you make a large batch, you can have leftovers cold! Thats right, cold. It can be eaten either way.

I often serve with a Cesear salad and French baguette sliced and dipped into olive oil with a splash of balsamic vinegar.

20 Minute Herb Pasta

Ingredients

  • 1 pound spaghetti noodles
  • 1-2 cloves garlic, chopped
  • 1/4 cup basil, stems removed
  • 1/4 cup parsley, stems removed
  • 1/4 cup arugula
  • 1/4 cup mint leaves
  • 4 tomatillo tomatoes
  • 1/4 cup extra virgin olive oil
  • 1/4 cup parmesan cheese, fresh, grated plus more for garnish
  • fresh cracked pepper
  • salt

Instructions

  • Dice the tomatillos and add them to a food processor.
  • To the processor add the mint, basil, parsely, arugula, garlic, and olive oil.
    Puree into a small chunk mixture.
    Season heavily with salt and pepper.
  • Fill a large pot with water and season with 1 tbsp. of salt. Bring to a boil and add the pasta. Cook for 8 minutes or until aldente.
    Drain and return to the pot.
    Add the herb sauce back to the pot.
  • Toss well and serve.
    Garnish with a good helping of fresh grated parmesan cheese and a crack of fresh pepper.
