Instructions
Dice the tomatillos and add them to a food processor.
To the processor add the mint, basil, parsely, arugula, garlic, and olive oil. Puree into a small chunk mixture. Season heavily with salt and pepper.
Fill a large pot with water and season with 1 tbsp. of salt. Bring to a boil and add the pasta. Cook for 8 minutes or until aldente. Drain and return to the pot. Add the herb sauce back to the pot.
Toss well and serve.Garnish with a good helping of fresh grated parmesan cheese and a crack of fresh pepper.
