Vegetable packed cabbage soup

This the original soup or diet soup that many people eat to lose weight. I of course can never leave any recipe alone because duhhh I know I can make it better.

I can’t stand watered down mushy soups so this is my version of the” diet” soup.

This baby is packed with so many vitamins from the fresh vegetables and under 100 calories per cup, even my picky husband loves it!

Now I do not recommend eating this every day for every meal, I simply like it because it is light on the tummy. I even add sausage and mozzarella sometimes and mmm that is delish!

You can even blend it up in the ninja or blender and drink it as a smoothie. I make mine with a large quantity of tomato juice so it tastes like V8.

OK enough chit chat lets get on it… again it may be called a diet soup but it doesn’t taste like one and you can add anything you so desire!

Cabbage and Vegetable Soup

Ingredients

  • 1/2 head cabbage, chopped into bite size pieces
  • 1/2 white or yellow onion, chopped
  • 1/2 bunch celery, chopped
  • 1 red bell pepper, chopped
  • 1 cup carrots, chopped
  • 1/2 cup green onion, chopped
  • 4 cloves garlic, chopped
  • 4 roma tomatoes, chopped canned or fresh
  • 1 envelope onion soup I use lipton brand
  • 46 ounce tomato juice
  • 3-4 cups broth vegetable or chicken
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp poultry seasoning
  • few dashes of tapatio OPTIONAL
  • 1 tbsp worcheshire
  • 1 tbsp salt
  • 1/2 tbsp pepper
  • 2 tbsp olive or avocado oil

Instructions

  • In a large sauce pan or stock pot over medium high, saute the all of the vegetables EXCEPT the cabbage.
  • Cook until the onions are translucent or about 8 minutes. Add the cabbage.
  • Now add all of the remaining ingredients and mix well
  • Bring to a boil. Then lower to a simmer and cook for 1 hour.
  • ENJOY!
