This dish is BURSTING with flavor from the sweet tomatoes to the savory broth.
I love a one pan meal and it doesn’t get easier than this. A simple pasta that has sweet tomatoes, garlic, red onion, orzo, broth, spinach, and parmesan cheese. Look how vibrant and beautiful it is.
You can serve as is or as a side with chicken or salmon. It also makes a great meal prep pasta for the week too.
Okay, let’s get started!
Ingredients:
- 10 oz sweet tomatoes, cut in half
- 2 cloves garlic, minced.
- 1 tbsp red onion, minced.
- 1 tbsp olive oil
- 1 tbsp herbs de Provence seasoning
- ½ a pound orzo pasta
- 2 cups chicken or vegetable broth
- 2 handfuls of fresh spinach
- ½ cup parmesan cheese, shredded (plus more for garnish)
- Salt and pepper to taste
Directions:
- In large pan over medium heat add the olive oil. Next goes the onions and garlic. Sauté for 1-2 minutes.
- Season with the herbs de Provence and salt/pepper to taste.
- Next goes the tomatoes.
- Cook for 7-10 minutes or until the tomatoes are softened.
- Now add the orzo and broth. Stir then cover with a lid.
- Simmer for 6-7 minutes or until the pasta is al dente and most of the liquid is gone.
- Add the spinach and parmesan cheese. Stir well.
- Serve immediately with extra parmesan cheese.
