Tomato-Spinach Orzo Pasta

This dish is BURSTING with flavor from the sweet tomatoes to the savory broth.

I love a one pan meal and it doesn’t get easier than this. A simple pasta that has sweet tomatoes, garlic, red onion, orzo, broth, spinach, and parmesan cheese. Look how vibrant and beautiful it is.

You can serve as is or as a side with chicken or salmon. It also makes a great meal prep pasta for the week too.

Okay, let’s get started!

Ingredients:
  • 10 oz sweet tomatoes, cut in half
  • 2 cloves garlic, minced.
  • 1 tbsp red onion, minced.
  • 1 tbsp olive oil
  • 1 tbsp herbs de Provence seasoning
  • ½ a pound orzo pasta
  • 2 cups chicken or vegetable broth
  • 2 handfuls of fresh spinach
  • ½ cup parmesan cheese, shredded (plus more for garnish)
  • Salt and pepper to taste
Directions:
  1. In large pan over medium heat add the olive oil. Next goes the onions and garlic. Sauté for 1-2 minutes.
  2. Season with the herbs de Provence and salt/pepper to taste.
  3. Next goes the tomatoes.
  4. Cook for 7-10 minutes or until the tomatoes are softened.
  5. Now add the orzo and broth. Stir then cover with a lid.
  6. Simmer for 6-7 minutes or until the pasta is al dente and most of the liquid is gone.
  7. Add the spinach and parmesan cheese. Stir well.
  8. Serve immediately with extra parmesan cheese.
  9. Enjoy!
