Super Chocolate Cupcakes!

MMMM Chocolate!

Chocolate is the ultimate fix for a sweet tooth and these are perfectly balanced with dark and milk chocolate! I like to make this recipe year round for various occasions. It makes a great treat at anytime but one of my favorites is on a warm day with a some sweet wine. It is the perfect brunch dessert!

The recipe creates a moist and airy cake with a frosting that reminds of a chocolate soft serve. It is a great combo and was one of my most popular when I was selling cakes! I like to add a shaving of bakers chocolate on top of the frosting but sometimes I add mini Hersey kisses, peanut butter cups, fresh fruit or sprinkles! Lots of options.

Ingredients

CAKE

  • 1 1/3 cup All purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 3/4 cup Dark cocoa powder
  • 1 1/2 cup white sugar
  • 3 tbsp butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup milk

Frosting

  • 1 lb powdered sugar
  • 1/2 cup butter, softened
  • 1/3 cup dark cocoa powder
  • 1/2 tsp vanilla extract
  • 1/2 cup milk

Topping options

  • Shaved chocolate , sprinkles, mini candy bars, Hershey kisses, fruit, or cookie crumbles

Instructions

  • Preheat the oven to 350°
    Line a muffin pan with cupcake liners
  • Combine the flour, baking soda, baking powder, cocoa powder, and salt in a bowl and set aside.
  • In a large bowl mix together the butter and sugar with a hand mixer or kitchen aid. Mix until fluffy
  • Add the eggs and vanilla, then mix.
  • Now add part of the flour mixture and then milk. Keep adding the flour mix and milk until it is all combined. Fill the liners 3/4 full with the batter.
  • Now cook for 22/24 minutes or until a toothpick inserted comes out clean. Set aside on a bakers rack to cool.
  • Now lets whip up the frosting
  • In a large bowl beat the butter until smooth, Now add half of the powdered sugar, half the cocoa, and milk. Mix until smooth. Next add the vanilla and the rest of the ingredients. Mix until smooth and the consistency of frosting.
  • Pipe or spread on the frosting to each cupcake.
  • Add sprinkles, chocolate, or any topping you desire!
