Thin fresh slices of zucchini tossed with fresh basil, sea salt, and dipped into a fragrant garlic aioli. This is one of my favorite appetizers/snacks to make up for guests or parties. It is so simple and enjoyable. I promise you will find yourself comin back for just “one more” that leads to 10 more.
I like to use a mandolin to slice the zucchini as it is the easiest way to get thin even slices but you can always test out your knife skills too. The basil adds so much flavor and beauty, so don’t skip this part.
Let’s get started!
INGREDIENTS:
- 2 large zucchinis, peeled and slice thinly
- 6-10 basil leaves
- Canola oil for frying
- sea salt for the zucchini
- 1/3 cup mayonnaise
- 1 medium garlic clove, minced
- 1/2 tbsp. lemon juice
- 1/4 tsp. sea salt for the dip
- 1/8 tsp. black pepper
DIRECTIONS:
- Peel and slice the zucchini
- Line a platter with paper towels and lay down the basil leaves.
- Heat oil in a pan, enough to fry the zucchini on med heat.
- When the oil is ready add zucchini in small batches. Cook until golden brown.
- Move to the plate with the basil and cook the remaining slices.
- Salt the zucchini to taste.
- Mix the mayo, garlic, sea salt, lemon juice, and pepper in a small bowl.
- Serve with the zucchini.
