orange – feta- cranberry salad with a citrus champagne dressing

Fresh, filling, and packed with so much flavor… what else do you want in a salad?! Ok, maybe some protein… which is a easy option. Just bake or grill up some chicken breast, salmon, or flank steak and boom a full meal!

However I like to serve this as a light lunch with a great wrap or as a side to a ham or steak dinner. Does not disappoint !

The citrus vinegar dressing is so yummy and one of my favorites for numerous salads that I will share soon.

Ok lets get started !

INGREDIENTS:

  • 1 Orange, peeled and cut into chunks
  • 1 blood orange, peeled and cut into chunks
  • 5 ounces of spring mix lettuce
  • 1 large handful of almonds roughly chopped
  • 2 tbsp of dried cranberries
  • 1/2 cup feta cheese

Dressing:

  • 1 tbsp extra virgin olive oil
  • 1/4 cup orange juice
  • 1 tbsp honey
  • 4 tbsp champagne vinegar
  • 1/2 tsp dijon mustard
  • salt and pepper to taste

DIRECTIONS:

First thing first, lets get the dressing made. In a small bowl whisk the oi, and orange juice. Add the honey and whisk well. Pour in the remaining ingredients and beat well. Set aside or refrigerate. Whisk well before serving.

Salad assembly:

Chop the almonds coarsely

Toss the salad… hee hee in a bowl or platter. Add both of the oranges.

Add the feta cheese, almonds, and the cranberries.

Pour the dressing on top, mix, serve, and…
