Old Fashioned Strawberry Shortcakes

American style shortcakes that are super easy to make with no special tools. They are baked to a light golden color and then covered with macerated strawberries and cream.

This style of shortcake has a crumbly texture very similar to a scone. They are light and really great with all kinds of fruits. This recipe has strawberries, but you can also do one of my favorites, peaches! (I will post that recipe soon). Along with peaches, blackberries, blueberries, raspberries, chocolate, lavender, and lemon are also super yummy.

Did you know that the first documented shortcake recipe was in 1588? It was the 2nd English cookbook to be published, called “The Good Huswives of Handmaid for Cookerie in Her Kitchen.” Strawberries were introduced in 1845 in Columbus Ohio. So needless to say, this has been a loved combination eaten for many years.  There are different versions of the cake around the world, but we will be eating the American version.

My MA made this every summer right when strawberries were is season. I feel like it’s just not summer without it!

Look how beautiful that is. The best part is that the shortcake is really easy to make and takes under 30 minutes. You can cut them into 6 simple squares like pictured below.

I like to add Osmo Toasted Vanilla Salt. You can also add a little sprinkle of sugar on top too or instead.

Old Fashioned Strawberry Shortcake

Crumbly shortcakes with macerated strawberries and cream make this a Summers dream dessert!

Ingredients

  • 1 1/2 cups All-purpose flour
  • 1/4 cup sugar, plus more for the berries.
  • 2 tsp baking powder
  • 1/4 tsp cream of tartar
  • 1/3 cup heavy cream
  • 1 egg
  • 1/2 cup butter, grated I use a regular cheese grater.
  • 1 1/2 cups sliced strawberries
  • whip cream
  • fresh mint for garnish

Instructions

  • Preheat the oven to 350℉
  • Start by mixing the strawberry slices with 2-3 tbsp. of sugar. Set aside or refrigerate.
  • In a large bowl combine the flour, 1/4 cup sugar, and cream of tartar.
  • Add the grated butter.

  • Mix.
    Next goes the egg and heavy cream. Stir until combined.
  • Now press/mix into ball in the bowl. Do the best you can with combining the ball all together.
  • Next, we are turning the dough out onto a lightly floured surface. Knead for 2 minutes.
  • Press into a rectangle. As even as you can get it. We want it about a 1/2 inch thick.
  • Cut into 6 pieces. One slice across and 3 down. You can leave as it or trim off the edges. I like to use a pizza cutter.

  • Move to a parchment covered baking sheet,
    (If you are using any flavored salt you can sprinkle on now)
  • Bake for 20 minutes. Let them cool slightly.
  • To assemble-
    Break/cut a shortcake in half, add some whip cream to the cake and then a scoop of strawberries, Next goes the 2nd shortcake. More cream and 1 berry and a mint leaf for garnish.
