Korean Chicken Stir-Fry

This dish is a winner, yeah that chicken dinner!

This juicy chicken is a bit spicy, a bit saucy, and pairs wonderfully with onions and peppers.  Stir-fry is a favorite in my home because it is healthy, easy to cook, and it is just so good! The best part is you can add any vegetable or protein you want to suit your family’s needs. You can serve as a main course with jasmine rice, fried rice, toss with noodles, or serve with a side salad.  

I like to serve with jasmine rice and soup for a 1st course. Here is my wonton soup or hot and sour soup to give a try.

Korean Chicken Stir-Fry

Tasty korean style stir-fry with hot chile paste for a bit of a sting!

Ingredients

  • 2 large chicken breasts, chopped into bite size pieces
  • 2 tbsp sesame oil
  • 1/4 white onion, sliced
  • 1 bell pepper sliced, thinly I like yellow or orange
  • 1 green onion, thinly sliced

Stir-fry Sauce

  • 1 tsp sesame oil
  • 1/2 tsp corn starch
  • 1/2 tsp ground ginger
  • 1 1/2 tsp lemon juice
  • 2-3 tsp garlic Chile paste or gochujang sauce.
  • 1/4 cup sugar
  • 1/4 cup soy
  • 1/4 cup water

Instructions

  • Heat a wok or large pan on med-high heat. Add 1 tbsp of sesame oil. Add the chicken and saute until no longer pink. When the chicken is cooked through move to a plate and drain any remaining liquid.
  • Whisk the sauce ingredients in a small bowl.
  • Put the wok back on med-high heat and add the last tbsp of sesame oil, saute the white onions and peppers until they start getting nice and toasty brown.
    Now add back the chicken. Stir to combine.
  • Add the sauce and stir well. Then goes the green onions.
    Cook the liquid down about 10 minutes.
  • Serve with rice or whatever you desire!
