I love how easy these are. You can store them in the fridge for the week and just a quick pop in the microwave for 1 minute to warm and boom! Or like I said earlier you can add these cuties to a brunch menu.
I love how the pesto adds a pop of flavor, the tomatoes keep it all juicy, and the parmesan creates a lovely cheese crust. If you don’t like tomato thinly sliced bell pepper is a nice alternative. You can also omit the cheese if you are lactose/dairy free. They are still delicious.
Here is my quick and easy pesto if you have time to make it! 10 minute Basil- Pesto Sauce
Ingredients:
- 6 Deli sliced smoked ham slices
- 1 roma tomato sliced into 12 thin slices
- 6 pastured eggs
- 1 1/2 tsp pesto
- 3 tbsp.. parmesan cheese, shredded
- fresh cracked pepper and salt, to taste
- green onions, chopped for topping (optional)
Directions:
Preheat the oven to 400 degrees grease a jumbo size muffin pan. Arrange each slice of ham into the muffin tin cups, making sure they are pressed down to the edges. Lay 2 tomato slices in the bottom.
Crack 1 egg in each muffin cup. Add 1/4 teaspoon of pesto in each cup. Season with the salt and pepper, top with 1/2 teaspoon of shredded parmesan.
Bake for 15 minutes. Let cool. Remove from the tins, serve with chopped green onions or store in Tupperware for the mornings!
