These babies are stuffed with a super easy ground beef mix, wrapped in homemade Corn Tortillas, smothered in red enchilada sauce, topped with cheese, and finished off with Le Sauce & Co’s Mole de PUEBLA Sauce!

Here is my Red sauce-Â Mexican RED Sauce – Mi Madre Sauce
For this recipe you can make 1/2 of the red sauce or make the whole batch and freeze the rest.
nstead of writing out an exact recipe I am going to give a quick rundown of how I made these. Enchiladas can be made in so many ways, feel free to change, add or follow exactly. I do highly recommend looking up Le Sauce, they have the most AMAZING finishing sauces! CLICK THE LINK BELOW to check them out.Â
If you want to use mole and do not have time to order you can get some bottles in most grocery stores or just omit, they are delicious either way!
- For a simple filling recipe, cook 1lb ground beef with 1/2 cup chopped yellow onion, drain grease, and add taco seasoning/water.
- After the water cooks down add 1 cup of Colby jack cheese. Melt, stuff, and roll in the corn tortillas.
- In a baking dish add 1/2 cup red enchilada sauce to coat the bottom.
- Stack the rolled tortillas. Cover with more enchilada sauce.
- Add extra cheese.
- Bake at 350° for 15-20 minutes or until the cheese is golden brown.
- If you want to take the dish over the edge pour on Mole de PUEBLA Sauce from Le Sauce or another mole sauce. Yum!
- I like to add fresh chopped jalapeño. Some fresh guacamole goes nice, sour cream, hot sauce and whatever you fancy!
- A quick cilantro rice goes nicely. Simple cook jasmine rice, toss with 1/4 cup of chopped cilantro, salt, pepper, and the juice of 2 limes.
