MMMMM pancakes! If you want that homestyle pancake to take you back to the “good ol days” here it is. This simple yet delicious pancake is fantastic with just a good quality syrup but if you want to take it to a whole notha level give the roasted strawberries a try. You won’t be disappointed!
A little tip I will offer for perfecting the pancakes is a very simple technique. Do not over mix the batter, it will just create a soupy mess. Second don’t try to cook these large servings of cake but instead go for smaller. This will ensure a even cooked golden crust and fluffy inside.

Ingredients:
Pancakes
- 1 1/2 cup all purpose flour
- 3 1/2 tsp baking powder
- 1 tbs sugar
- 1/4 tsp salt
- 1 egg
- 1 1/4 cups milk
- 3 tbs butter, melted
Roasted Strawberries
- 1 pound strawberries, hulled
- 1/4 cup sugar
- 1 tsp vanilla
- 2 tsp maple syrup
- 1/2 tsp sea salt
Directions:
Roasted Strawberries
Heat the oven to 350 degrees. In a bowl mix the first 4 ingredients. Spread the berries onto a baking sheet lined with parchment paper. Sprinkle with 1/2 tsp sea salt and bake for 15 minutes.
Pancakes
In a large bowl mix together the flour, baking powder, sugar, and salt. Make a well or hole in the bowl and pour in the milk, egg, and melted butter into the middle. Stir until smooth but do not over mix.
Heat a lightly oiled griddle or pan on med-high heat. With a large spoon scoop a heaping amount of batter onto the cooking surface spreading it into a even circle. Add a few at a time. Cook for 2 minutes on each side or until golden brown.
Stack the pancakes on a plate, pour on some maple syrup, add the roasted strawberries and top with nuts. (optional)
