Pancakes with Roasted Strawberry Topping!

Homestyle pancakes that are fluffy and flavorful!

This simple yet delicious pancake is fantastic with just excellent quality syrup, but if you want to elevate it, try the roasted strawberries. You will not be disappointed!

A little tip- To get the perfect pancakes, there is a simple technique. Do not overmix the batter, as it will create a soupy mess. Second, do not try to cook large servings of pancake but instead go for smaller ones. This will ensure an evenly cooked golden crust and fluffy inside.

 

Ok, let’s get started!

Ingredients:

Pancakes
  • 1 1/2 cup all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/4 cups milk
  • 3 tbsp butter, melted
  • 1 lemon zested 
Roasted Strawberries
  • 1 pound strawberries, sliced
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 tsp maple syrup
  • 1/2 tsp sea salt
Toppings 
  • nuts
  • powdered sugar 

Directions:

 Roasted Strawberries-
  1. Heat the oven to 350 degrees.
  2. In a bowl, mix the first 4 ingredients.
  3. Spread the berries onto a baking sheet lined with parchment paper.
  4. Sprinkle with 1/2 tsp sea salt and bake for 15 minutes.
Pancakes-
  1. In a large bowl, mix together the flour, baking powder, sugar, and salt.
  2. Make a well or hole in the bowl and pour in the milk, egg,  lemon zest, and melted butter into the middle.
  3. Stir until smooth but do not overmix.
  4. Heat a lightly oiled griddle or pan on medium-high heat.
  5. With a large spoon, scoop a heaping amount of batter onto the cooking surface, spreading it into an even circle. 
  6. Add a few at a time- if you have room.
  7. Cook for 2 minutes on each side or until golden brown. 
  8. Stack the pancakes on a plate, pour on some maple syrup, add the roasted strawberries, and top with powdered sugar and nuts (optional).
