A flavorful salad filled with vegetables, feta cheese, couscous, beans, and topped with a citrus dressing that has cilantro and mint. YUM!
As we are now officially in Spring the days are longer, warmer, and mother nature is starting to come alive again. I know personally during this time of year I like to find healthy and simple meals to throw into my routine. This salad is one of my favorites to make in the beginning of the week for lunches. It will last in the fridge for about 4 days so makes a great one for prepping. It can be eaten by itself or with a side of protein. Roasted corn is one of my favorites to eat with feta cheese, they make a perfect marriage. I like to do a quick roast in a cast iron pan for the corn and let it cool, but you can buy canned instead too.

Garbanzo Bean Salad with Citrus Dressing
Ingredients
- 1 can garbanzo beans drained, and rinsed
- 1 cup couscous cooked and cooled. I like to use the pearl couscous
- 10 cherry tomatoes, chopped
- 1/4 cup red onion, diced
- 2 ears of corn roasted and cut off the cob OR 1 can of roasted corn
- 1 medium cucumber, peeled and chopped
- 1 6OZ container of feta cheese I buy original
- 1/4 cup cilantro, minced small
- 1/ 1/2 tbsp. mint, minced
- 1 lime, juiced
- 1 lemon, juiced
- 1/4 cup olive oil
- salt and pepper to taste
Instructions
- In a medium bowl combine the mint, cilantro, oil, lemon, lime, salt and pepper. Wisk until combined.
- In a large bowl now add all the remaining ingredients. Stir to combine and pour the dressing on. Toss well.
- Serve right away or store for 4 days in the refrigerator.
