Garbanzo Bean Salad with Citrus Dressing
A flavorful salad filled with vegetables, feta cheese, couscous, beans, and topped with a citrus dressing that has cilantro and mint. YUM!

Ingredients

can
garbanzo beans drained, and rinsed

cup
couscous cooked and cooled. I like to use the pearl couscous

cherry tomatoes, chopped
1/4
cup
red onion, diced
2
ears of corn roasted and cut off the cob OR 1 can of roasted corn
1
medium
cucumber, peeled and chopped

6OZ
container of feta cheese
I buy original
1/4
cup
cilantro, minced small
1/ 1/2
tbsp.
mint, minced
1
lime, juiced
1
lemon, juiced
1/4
cup
olive oil
salt and pepper to taste
Instructions
In a medium bowl combine the mint, cilantro, oil, lemon, lime, salt and pepper.
Wisk until combined.
In a large bowl now add all the remaining ingredients.
Stir to combine and pour the dressing on.
Toss well.
Serve right away or store for 4 days in the refrigerator.
