Garbanzo Bean Salad with Citrus Dressing

A flavorful salad filled with vegetables, feta cheese, couscous, beans, and topped with a citrus dressing that has cilantro and mint. YUM!

Ingredients

  • 1 can garbanzo beans drained, and rinsed
  • 1 cup couscous cooked and cooled. I like to use the pearl couscous
  • 10 cherry tomatoes, chopped
  • 1/4 cup red onion, diced
  • 2 ears of corn roasted and cut off the cob OR 1 can of roasted corn
  • 1 medium cucumber, peeled and chopped
  • 1 6OZ container of feta cheese I buy original
  • 1/4 cup cilantro, minced small
  • 1/ 1/2 tbsp. mint, minced
  • 1 lime, juiced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  • In a medium bowl combine the mint, cilantro, oil, lemon, lime, salt and pepper.
    Wisk until combined.
  • In a large bowl now add all the remaining ingredients.
    Stir to combine and pour the dressing on.
    Toss well.
  • Serve right away or store for 4 days in the refrigerator.
