This recipe is SO good and it takes a little bit of prep but trust me THIS IS AMAZING. We start with making bacon, then sautéing onion and spices to get the caramelized color and texture like in French onion soup. Cook our pasta in broth with the onion mixture. Add a 3-cheese sauce, and the bacon.
Mix all together and pour into a casserole dish. Top with a homemade breadcrumb mix and shredded cheese. Bake until golden brown and bubbly. Okay, let’s get started!
French Onion Mac & Cheese
Equipment
- Baking dish/casserole dish
- Dutch oven or large deep pan
- Sauce pan
Ingredients
- 5-6 strips bacon, cooked and chopped to bite size pieces. Set aside until later.
- 1/2 yellow onion, sliced thin
- 2 tbsp butter
- 1/2 tsp dried onion flakes
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp thyme, chopped dried or fresh
- 1/2 tsp rosemary, chopped dried or fresh
- 1 tbsp flour
- 1/4 cup white wine
- 4 cups beef broth
- 12 ounces Large macaroni I like the curved mac
Breadcrumbs
- 1/2 baguette, cut into slices
- 1/2 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp dried onion flakes
Cheese sauce
- 1 1/2 cups Gruyere chese, shredded plus 1/2 cup for topping
- 1/2 cup provolone cheese
- 2 cups white cheddar cheese shredded
- 1/2 cup butter
- 1 tbsp flour
- 1 cup millk
- 1/4 cup white wine
- salt and pepper
Instructions
Breadcrumbs
- Preheat the oven to 350 degrees. Cut the bread into thin slices. Drizzle on 1/2 tbsp olive oil and bake for 15 minutes or until crisp.
- Add them to a food processor and grind or smash in a bag with a rolling pin. Mix the breadcrumbs with the Italian seasoning and dried onion flakes. Set aside and start the onions.
Pasta
- In a Dutch oven or deep pan. Add the butter and oil over med/low heat.Now add the onions, thyme, rosemary, garlic, and salt.
- Stir well and cook for about 35-40 minutes until the onion are deeply caramelized.
- Now add the flour, stir and pour in the wine and broth. Scrape up any bits from the bottom of the pan.
- Next goes the noodles to the pan. Mix well and cover with a lid to cook the noodles. I'd say cook for 10 minutes or so. While the noodles are cooking make the cheese sauce.
Cheese sauce
- In a medium saucepan melt the butter over medium heat.
- Add the flour and whisk until mixed all the way in. Cook while whisking constantly for 1 minute.
- Add the milk, salt, and pepper. Cook until the milk starts to thicken, stiring off and on. You will know it is ready when it coats the back of the spoon like gravy.
- Now add the cheeses. Whisk immediately,
- Continue whisking, Add the wine and whisk until smooth. Keep on low and check the noodles.
- The broth should be almost gone and the noodles aldente or cooked. Cook a bit longer if need be,
- Once ready, pour in the cheese and bacon. Mix well,
- Pour the pasta into a large casserole dish or 9"x13" pan.
- Sprinkle on the remaining cheese and the breadcrumbs.
- Bake at 350 degrees for 15 to 20 minutes or until the cheese is melted and the breadcrumbs are a light golden brown.
- Serve hot.
