Instructions
Breadcrumbs
Preheat the oven to 350 degrees. Cut the bread into thin slices. Drizzle on 1/2 tbsp olive oil and bake for 15 minutes or until crisp.
Add them to a food processor and grind or smash in a bag with a rolling pin. Mix the breadcrumbs with the Italian seasoning and dried onion flakes. Set aside and start the onions.
Pasta
In a Dutch oven or deep pan. Add the butter and oil over med/low heat. Now add the onions, thyme, rosemary, garlic, and salt.
Stir well and cook for about 35-40 minutes until the onion are deeply caramelized.
Now add the flour, stir and pour in the wine and broth. Scrape up any bits from the bottom of the pan.
Next goes the noodles to the pan. Mix well and cover with a lid to cook the noodles. I'd say cook for 10 minutes or so. While the noodles are cooking make the cheese sauce.
Cheese sauce
In a medium saucepan melt the butter over medium heat.
Add the flour and whisk until mixed all the way in. Cook while whisking constantly for 1 minute.
Add the milk, salt, and pepper. Cook until the milk starts to thicken, stiring off and on. You will know it is ready when it coats the back of the spoon like gravy.
Now add the cheeses. Whisk immediately,
Continue whisking, Add the wine and whisk until smooth. Keep on low and check the noodles.
The broth should be almost gone and the noodles aldente or cooked. Cook a bit longer if need be,
Once ready, pour in the cheese and bacon. Mix well,
Pour the pasta into a large casserole dish or 9"x13" pan.
Sprinkle on the remaining cheese and the breadcrumbs.
Bake at 350 degrees for 15 to 20 minutes or until the cheese is melted and the breadcrumbs are a light golden brown.
