A fun twist on egg in a hole toast by using freshly made focaccia bread.Â
Toast really got a facelift over the last few years and has been a popular breakfast meal with avocado, meats, eggs, cheeses, and vegetables as toppings. I am all for it as I love bread. I decided to take it up a notch by using my homemade focaccia! Focaccia is one of my favorites to make and eat. So many flavors that work with various dishes.Â

Now you do not have to make it from scratch, a visit to the bakery will do simply fine. This is easy to make and filling too. Simply pop a hole in a slice of bread with a large round cookie cutter or use a mason jar canning lid. Crack eggs in, season and bake!Â
Ingredients:
Makes 2 servings
- 1 loaf focaccia bread, cut into 2 decent size pieces (about the size of traditional bread slices)
- 4 eggs
- 1/4 cup parmesan cheese, shredded
- salt and pepper to taste
- 1/4 tsp. paprika
- Extra virgin olive oil
- 1 green onion, sliced
Directions:Â
- Pre-heat the oven to 350 degrees.
- Line a baking sheet with parchment paper
- Using a large round cookie cutter, biscuit cutter, or canning lid cut out a hole in the center of the bread slices
- Cut the bread slices and hole pieces on the baking sheet.
- Crack 2 eggs in each hole
- Season with salt, pepper, and paprika
- Drizzle olive oil over the bread focusing on the egg primarily
- Bake for 15- 20 minutes
- Sprinkle on the green onions and cheese.
- ENJOY!
Feel free to add additional ingredients/toppings. You can add meats to the egg like cooked chopped ham/bacon, chopped bell pepper, spinach, or various cheeses. Fresh tomato slices go well with some truffle salt too!
