Fantastic Pasta With Bacon And Ricotta Cheese

This refreshing meal is so delicious you will want to lick the bowl!

Not only does it taste amazing it is really easy to make as all the best pasta dishes are. To me the best way to eat it is with fresh pasta you can make your own (here is my basic pasta dough recipe Basic Pasta Dough – Kitchen Aid ) or buy in the grocery store. I like a fettuccine noodle with this dish. If don’t have fresh pasta on hand dried is still yummy!

Doesn’t that look gorgeous? Don’t let the fancy pasta swirl intimidate you it is super easy. The key is quality ingredients.

Here are couple ingredients I recommend to make this pasta taste like it came from a 5 star restaurant,

  • Aged Parmesan cheese. I buy it in a block and shave fine shreds
  • Fresh basil, You can buy a plant and keep indoors or fresh cut in the produce section
  • Hickory smoked bacon
  • Fresh garlic
  • A good dry white wine, I used Pinot Grigio for this recipe
  • Fresh noodles
  • A great Mariana, there are many good store bought options but if you want to try my recipe here it is! Classic Marinara

You can serve with antipasto and fresh bread or green salad.

Fantastic Pasta with Bacon and Ricotta

This refreshing pasta is incredibly easy to make but tastes like it came from a high end restaurant!

Ingredients

  • 1 package of fresh fettuccine pasta or 1 box of dry
  • 3/4 cup good quality marinara sauce
  • 2 garlic cloves, minced
  • 1/2 package of hickory smoked bacon, cooked and chopped
  • 1/2 cup a good aged Parmesan cheese, shredded
  • 1/2 cup dry white wine
  • 1/2 cup ricotta cheese
  • 1 tbsp basil, thinly sliced
  • 1 tbsp olive oil plus more for drizzling
  • 1/2 tsp pepper

Instructions

  • In a large stock pot or large sauce pan boil water with 1 tbsp of salt ( the salt is necessary for flavoring the noodles) If using fresh boil for 3 minutes, if dry noodles 8 minutes or al dente
  • Drain the noodles and set aside
  • In the same pot on med-high heat add 1 tbsp olive oil. After the oil is warmed add the garlic and stir immediately. Keep mixing, we don't want it to burn. About a minute in add the marinara and bacon. Mix.
  • Next step is toss the noodles back into the pot. Toss until the ingredients are friends and incorporated evenly.
  • Add the wine and pepper, toss the noodles for about 2 minutes, let the wine cook off a bit.
  • Turn off the heat, do a final toss then add the ricotta in teaspoon size dollops all around the pot of noodles. Next add the sliced basil. Add a good drizzle of olive oil all around the pot.
  • Move pot off the heat and top with the Parmesan cheese.
  • Serve
