Fantastic Pasta with Bacon and Ricotta

This refreshing pasta is incredibly easy to make but tastes like it came from a high end restaurant!

Ingredients

  • 1 package of fresh fettuccine pasta or 1 box of dry
  • 3/4 cup good quality marinara sauce
  • 2 garlic cloves, minced
  • 1/2 package of hickory smoked bacon, cooked and chopped
  • 1/2 cup a good aged Parmesan cheese, shredded
  • 1/2 cup dry white wine
  • 1/2 cup ricotta cheese
  • 1 tbsp basil, thinly sliced
  • 1 tbsp olive oil plus more for drizzling
  • 1/2 tsp pepper

Instructions

  • In a large stock pot or large sauce pan boil water with 1 tbsp of salt ( the salt is necessary for flavoring the noodles) If using fresh boil for 3 minutes, if dry noodles 8 minutes or al dente
  • Drain the noodles and set aside
  • In the same pot on med-high heat add 1 tbsp olive oil. After the oil is warmed add the garlic and stir immediately. Keep mixing, we don't want it to burn. About a minute in add the marinara and bacon. Mix.
  • Next step is toss the noodles back into the pot. Toss until the ingredients are friends and incorporated evenly.
  • Add the wine and pepper, toss the noodles for about 2 minutes, let the wine cook off a bit.
  • Turn off the heat, do a final toss then add the ricotta in teaspoon size dollops all around the pot of noodles. Next add the sliced basil. Add a good drizzle of olive oil all around the pot.
  • Move pot off the heat and top with the Parmesan cheese.
  • Serve
