Fantastic Air fryer Red Potatoes!

For this one we will be using the baby reds. They usually come in a mesh bag already portioned in the grocery store. You can most definitely use regular size just make sure to chop up into bite sizes. Like this…

I have been having so much fun playing/experimenting with my Air Fryer. I got the Ninja with 2 baskets that has a smart match cook setting so I can have 2 different things cooking that will be done at the same time. You can bake, roast, broil, dehydrate, and of course air fry! Highly recommend.

Don’t mind the foody fingerprints … but I mean it is used in a real kitchen!

OK back to the potatoes. This recipe I made as a side to steaks and it turned out soooo good and insanely easy. The best recipes always are.

Now after we wash and chop, we will be air frying the baby reds for 20 minutes. While they are cooking and getting golden, lets mix up this fantastic sauce.

Minced onion, minced parsley, minced garlic, dill, shredded Gruyere cheese, olive oil, champagne vinegar, and salt/pepper. Whisk to combine, then toss with the potatoes!

Yes they do taste as good as they look!

Fantastic Air Fryer Red Potatoes

Perfectly cooked potatoes tossed in a delightful herb sauce, makes a fantastic side dish!

Ingredients

  • 1 bag of baby reds or 4-5 medium red potatoes
  • 2 tbsp olive oil plus more
  • 1/2 tsp champagne vinegar
  • 1 tbsp minced onion
  • 1 tbsp minced parsley
  • 1 tsp minced garlic
  • 1/4 tsp dried dill
  • 1 tbsp shredded Gruyere or Parmesan cheese
  • salt and pepper to taste

Instructions

  • Wash and chop the reds into bite sizes
  • Toss with a small amount of olive oil. Just enough to lube them up so they are not dry.
  • Air fry at 400° for 20 minutes. I like to give them a good shake or toss half way through.
  • Now while they are cooking… lets mix up the sauce.
  • Combine all of the ingredients, whisk, and toss with the cooked potatoes.
  • Plate and pour the remaining sauce over top.
  • ENJOY!
