Fantastic Air Fryer Red Potatoes
Perfectly cooked potatoes tossed in a delightful herb sauce, makes a fantastic side dish!

Ingredients
1
bag of baby reds or 4-5 medium red potatoes
2
tbsp
olive oil plus more
1/2
tsp
champagne vinegar
1
tbsp
minced onion
1
tbsp
minced parsley
1
tsp
minced garlic
1/4
tsp
dried dill
1
tbsp
shredded Gruyere or Parmesan cheese
salt and pepper to taste
Instructions
Wash and chop the reds into bite sizes
Toss with a small amount of olive oil. Just enough to lube them up so they are not dry.
Air fry at 400° for 20 minutes. I like to give them a good shake or toss half way through.
Now while they are cooking... lets mix up the sauce.
Combine all of the ingredients, whisk, and toss with the cooked potatoes.
Plate and pour the remaining sauce over top.
