Savory and moist meatloaf with a sweet and spicy glaze topped with garlic mashed potatoes!
Besides looking and tasting incredible they are so easy to make by popping into a cupcake pan. They will cook quicker and if you have kids, they will really love them! I have been making these for 10 years and the glaze is the best part, and an absolute must not skip! It is made up of ketchup, brown sugar, mustard, and my now favorite addition-TRUFF hot sauce. You can leave out the hot sauce if the kids are sensitive, but if not TRUFF sauce is the way to go!

If you are in a rush 4 cheese Idahoan instant mashed does the job. You can jazz them up with a bit of butter and pepper after they are cooked. I like to serve these meatloaf cupcakes with a green salad.

Meatloaf Cupcakes
Equipment
- Jumbo Cupcake Pan
Ingredients
- 1 lb grass-fed ground beef
- 2 cloves garlic, minced
- 1/2 shallot, minced
- 1 tsp Italian seasoning
- 3 tbsp Worcestershire sauce
- 2 tbsp tomato sauce or marinara
- 1/2 cup breadcrumbs/ Italian style
- 1 egg
- 2 tsp mustard yellow or Dijon
- 1 1/2 tsp salt
- 2 tsp pepper
- 1 tbsp rosemary, minced garnish (optional)
- bacon bits garnish (optional)
- 2 cups Prepared mashed potatoes my recipe is in the post
GLAZE
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tbsp mustard Dijon or yellow mustard
- 1/2 tbsp TRUFF hot sauce or any hot sauce you like
Instructions
- Preheat oven to 350°
- Grease a Jumbo cupcake pan and set aside
- In a large bowl combine the ground beef, bread crumbs, egg, garlic, shallow, Italian seasoning, ketchup, salt, pepper, mustard, worcestershire sauce
- Mix the glaze in a small bowl, pour half of the mix evenly in the bottom pan of each cup (usually makes about 4-6 cups)
- Press a even amount of meat mix into the cupcake about 3/4 full.
- Cook for 35 minutes.
- With the remaining glaze, brush on top of the meat cups.
- Cook for 10 minutes more or until done. 165° on a thermometer
- Scoop or pipe on with a piping bag the mashed potato mix. Top with rosemary or bacon bits. Or even both!
