Meatloaf Cupcakes

Savory beef cakes with a sweet glaze and delicious creamy mashed potato topper, these are sure to be a family favorite!

Ingredients

  • 1 lb grass-fed ground beef
  • 2 cloves garlic, minced
  • 1/2 shallot, minced
  • 1 tsp Italian seasoning
  • 3 tbsp Worcestershire sauce
  • 2 tbsp tomato sauce or marinara
  • 1/2 cup breadcrumbs/ Italian style
  • 1 egg
  • 2 tsp mustard yellow or Dijon
  • 1 1/2 tsp salt
  • 2 tsp pepper
  • 1 tbsp rosemary, minced garnish (optional)
  • bacon bits garnish (optional)
  • 2 cups Prepared mashed potatoes my recipe is in the post

GLAZE

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp mustard Dijon or yellow mustard
  • 1/2 tbsp TRUFF hot sauce or any hot sauce you like

Instructions

  • Preheat oven to 350°
  • Grease a Jumbo cupcake pan and set aside
  • In a large bowl combine the ground beef, bread crumbs, egg, garlic, shallow, Italian seasoning, ketchup, salt, pepper, mustard, worcestershire sauce
  • Mix the glaze in a small bowl, pour half of the mix evenly in the bottom pan of each cup (usually makes about 4-6 cups)
  • Press a even amount of meat mix into the cupcake about 3/4 full.
  • Cook for 35 minutes.
  • With the remaining glaze, brush on top of the meat cups.
  • Cook for 10 minutes more or until done. 165° on a thermometer
  • Scoop or pipe on with a piping bag the mashed potato mix. Top with rosemary or bacon bits. Or even both!
