Coconut and Cornflake Cookies

This fabulous cookie is a favorite for many. It is filled with cornflakes, coconut flakes, pecans, and oats!  

 It is quite a treat and really easy to make too. They are great for large gatherings, potlucks, or holidays. I put these on my Christmas cookie list each year and they go into my gift treat boxes for friends and family. They also happen to be my husband’s favorite.  

If you have a standing mixer, it really makes this, go quickly. If not a large bowl and hand mixer will do just fine! We start by beating the butter and sugar, add in the oil, egg, and vanilla extract. Next goes the flour mixture, and finally all the fun ingredients. Flakes, nuts, and oats.  

Drop tablespoonfuls on a baking sheet, then bake for 12 minutes. It is that easy.

Coconut and Cornflake Cookies

Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 1 egg
  • 2 tsp vanilla extract
  • 3 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup cornflakes
  • 1 cup coconut flakes
  • 1 cup oats
  • 1 cup pecan, chopped small

Instructions

  • Preheat the oven to 375℉
  • Line baking sheet (s) with parchment paper.
  • In a mixer or large bowl, combine 1 cup butter softened and 1 cup brown sugar.
    Beat until smooth and fluffy. Slowly incorporate the oil and mix until combined.
  • Now add the egg and vanilla extract. Mix well.
  • In a seperate bowl add the flour, baking soda, and salt. Mix and add to the sugar mixture.
  • Now add the coconut, corn flakes, oats, and nuts. Mix unti just incorperated.
  • Drop on the baking sheets (s) with a cookie scoop or by the tablespoonful.
  • Bake for 12 minutes.

  • Let cool slightly then move to a baking rack.
  • Repeat until all the dough is gone.
  • Eat right away or store into a air tight container.
  • ENJOY!
