Chinese Chicken Salad

This Asian inspired salad with a homemade dressing is done in 20 minutes and on the table. It is so easy to throw together with store bought salad mix taking care of most of the work.

We start with baked chicken breasts. They are seasoned with Chinese 5 spice, salt/pepper, and chopped into bite size pieces. 1 cup of mandarin oranges, chopped romaine lettuce, and a bag of Dole sesame Asian salad mix. The mix has everything we need in one bag including sliced almonds, and crispy wontons. We will add green onions and sesame seeds along with a DELICIOUS homemade dressing!

How great does that look? Of course if you want to take the time to chop up cabbage, carrots, etc. by all means. I just like to use pre packaged mix for quick weeknight meals.

Chinese Chicken Salad

Ingredients

  • 2 chicken breasts
  • 1/2 tsp Chinese 5 spice
  • salt and pepper
  • 1 10.6 ounce Dole Asian Sesame Salad mix discard or reserve the dressing for another time
  • 1 1/2 cups romaine lettuce chopped thin
  • 1 cup or 12 ounce can mandarin oranges, drained of the juice
  • 1 green onion, sliced thin
  • 1 tbsp. sesame seeds plus extra
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup creamy peanut butter
  • 1 lime, juiced
  • 1/2 tbsp. cilantro
  • 1 tsp. ginger paste
  • 1 tsp minced garlic
  • 3 tbsp. Avocado or canola oil

Instructions

Chicken

  • Preheat oven to 350° Line a baking sheet with parchment paper and add the chicken to the baking sheet.
  • Season the chicken with salt, pepper, and Chinese spice. Sprinkle on some olive oil and bake for 20 minutes or until the internal temperature is 165°. Set aside to cool and then chop into bite size pieces.

Dressing

  • Combine the vinegar, soy, peanut butter, cilantro, oil, lime juice, garlic, 1 tbsp. sesame seeds, and ginger paste. Mix with a immersion blender or in a regular blender/food processor.

Salad

  • In a large bowl add the packet of sliced almonds and crisp wontons. Then the romaine, Asian salad mix, mandarins, chicken, green onion, and some extra sesame seeds.
  • Pour on the dressing and toss together.
  • Serve and ENJOY!
